Not only does this coconut twist make my staple caulliflower soup recipe even more delicious, but it also makes it even more nutritious as well! Here are some nutrients found in coconut milk and their benefits:
- manganese - stabilizes blood sugar levels
- copper - maintains skin elasticity
- phosphorous - strengthens bones
- iron - prevents anaemia
- magnesium - relieves muscle tension or soreness
- selenium - reduces joint inflammation
- potassium - lowers blood pressure
- vitamin C - boosts immune system
- zinc - may help prevent prostate cancer
- dietary fibre - gives feeling of satiety to help maintain/achieve a healthy weight
